Cucumber Blog Party

The last blog party was a lot of fun with recipes on using all those zucchinis.  Now we are on to Cucumbers!
Heres my post for what to do with your excess cucumbers.

Cucumber Dill Sauce

1 cup water
1 cup sugar
1 T salt
1/3 cup white vinegar
cucumber, peeled, seeded, and diced
1 cup sour cream
1 T fresh dill, chopped

Combine water, sugar, salt, and vinegar.  When sugar and salt are dissolved, add cucumbers. Refrigerate 1 hour before serving.  When ready to serve, drain cucumber, fold into sour cream and add dill.  Makes 4 servings.
