Who doesn't love soup?

I love soups in the winter: chicken tortilla, vegetable, broccoli and cheese, and black bean.  I made a taco soup using hamburger meat a couple of weeks ago. It's simple and delicious, and served as lunch on a number of occasions at work.  It has become one of my favorites

January is National Soup Month, so let me share this recipe for Taco Soup in the crockpot. Put this on before your day begins, and you will have dinner ready with little fuss.



1 pound ground beef
1 small onion chopped
1 can/bottle of tomato juice (48 oz)
1/3 cup sugar (or a little less)
1 cup frozen corn
1 package taco seasoning
1 can chili beans

Cook ground beef and onion. Drain
While beef and onion are cooking, add all the other ingredients to the crockpot. Simmer on low for 4hours or on high for 2hours
After the beef and onion are cooked, add to the crock pot with the other ingredients.
Serve with crushed tortillas, shredded cheese and sour cream.

I would decrease the sugar a little bit. The frozen corn was also sweet, but this soup is delicious.
A big slice of homemade bread will finish the meal.
